Easy Vegan Brunch Gwenyth Style


There's not much to say about this really - kale, mushroom, tomato and avocado on wholemeal toast. Healthy fats and an abundance of vitamins, where can you go wrong? If you've never tried kale then this is a pretty safe way to do so, just fry it in with the mushrooms (fried in coconut oil of course) and you can barely even taste it actually. Just make sure to get rid of the hard spines on the leaves and give them a little massage first to make them more palatable. Add a little salt and pepper and you're good to go. Enjoy!
